Risotto is a food of summer. There is a reason why this dish appears on so many menus. It is light and can be paired with an assortment of flavors. Every risotto I tried tasted completely different from the previous yet they were all so delicious. This flavor difference could be on part because of the location and the local ingredients of each country. Nevertheless, I ate a lot of yummy risotto that I have to share.
The first risotto is from the restaurant at Hotel Sanders, a cute hotel in Copenhagen, right across from the Det Kongelige Teater. This risotto was filled with produce like zucchini, sun-dried tomatoes, cherry tomatoes, edible flowers, and peas. I used to not like zucchini until Sanders' risotto gave me a new appreciation for this vegetable. This risotto feels very fresh like you are eating a delicious garden and is paired perfectly with the Danish cheese. This was my favorite risotto that I had this summer.
Traveling to the land of apple strudel and sausages, the second risotto was at a restaurant called Clementine. Located in the Palais Coburg in Vienna, the restaurant was named after Princess Clementine de Orléans who first lived in the palace. I liked how this risotto was cheesy and had summery peaches and burrata. The sweet combined with the savory provided a delightful and refreshing taste.
Risotto originated in northern Italy, and it is something special to taste this food in its country of origin. Combined with the pesto and the mushrooms, which is a food that I don't even like, this Milanese risotto is delicious. The restaurant is called La Locanda del Gatto Rosso, and it is adorable with its cat-themed decorations.
The last risotto of the summer was from Lezzeno, Lake Como, Italy at the restaurant at Hotel Filario. It had powerful flavors of sweet lemon and goat cheese and was cooked al dente perfectly. Not only was the risotto almost too pretty to eat, but the views of the lake at this restaurant are gorgeous (view the image at the top of this page).
I hope that if you ever find yourself in any of these places you will go try one of these. One might think that I would and should be sick of risotto by now, but every risotto left me wanting more.
