There is a reason why this restaurant is constantly rated the best in the world. Not only are you surrounded by a beautiful garden, overlooking the canals, filled with wildflowers and plants used in the cooking and greeted with a welcome from the chefs and waiters lined up for you when you walk through the door, but every dish is overflowing with creativity. This restaurant is located in Copenhagen, Denmark, and the head chef is Kenneth Foong. Owned by the Danish chef, René Redzepi, noma makes you reimagine what food is and can be. Every single dish exhibits beauty and makes you feel like you are eating nature.
I did the 18-course vegetarian night. My favorite courses included the flower tart, the summer salad, the pea and white currant dumpling, the grilled padrón pepper, and the marigold tempura. The flower tart's presentation is stunning. It looks just like a flower growing in their garden. The summer salad might have been the best salad I have ever tried. All of the fruits and veggies are so fresh, and the plate looks like a piece of colorful artwork. The dumpling was beautiful as you could see the peas inside, and it tasted like a delicious ravioli. The pepper was sweet and had a nice surprise of legumes, etc. as you bit into it. I loved the sauce for the tempura and how they fried a marigold. Anything fried is good, but this was something else.
I also want to mention their super cool option to do a juice tasting where they have juices that pair with and compliment the taste of each dish. The juice flavors ranged from elderflower to cucumber and rose. It was so refreshing.
My experience at noma is one that I will never forget. The food is delicious and provokes curiosity and exploration with its gorgeous displays and unique flavors. I loved seeing how many different pleasing dishes could be created without meat. Your time at noma will leave you enchanted and inspired. The cuisine and the lovely environment is beyond compare.
